Hi there, I live in the very beautiful Athens Greece where there is an abundance of vegetables but unfortunately a lack in some. Especially snow peas! I was wondering what might I substitute them with? Thanks!

It sort of depends on what you are making and what purpose they are serving. Are they being added for crunchiness, if so, celery, green beans or chayote could be added instead. You could even add bean sprouts if it for a stir fry.

If you are looking for that nice green color then you may want to try using asparagus, broccoli or sugar snap peas (which are rounder and sweeter) instead.

Basically, you can use whatever you like, maybe just go to the market and look for what is fresh, green (if desired) and crispy and then experiment. Hope this helps!
