Gluten

Gluten

Hi,

I have a bread machine and it gives me very good results when doing white flour based recipes. However, when doing whole flour based recipes, they specifically indicate to add gluten. There is no explanation as of what is gluten and frequent visit to different groceries has proven unsuccessful.
Am I not looking for the right thing ? Or, am I supposed to make the glutten myself ?

RE: Gluten

They are likely referring to pure gluten flour, also known as vital, which is made from wheat. It is very high in protein (all of the bran and starch have been removed). Sometimes this product can be found in health food or specialty stores. If you can find it, you can start by adding 1 teaspoon per cup of flour used or according to the recipes for your bread machine. Cheers!
