roasting veggies at 275 F......

Tonight I need to roast a large tray of veggies while my roast is cooking at 275F....does anyone know how they would turn out? I always roast my veggies at 400F for about an hour but as I don't have a second oven and wanted to make a roast, I thought I'd try putting veggies in the 275F oven for 2 hours along with the roast. Any experience anyone? Thanks!

Technically you will not be roasting at this temperature. The veggies will cook but they will likely not get the nice color that you are used to when you roast at 400°F.

When you take the roast out to rest, I suggest turning the heat up and this will help to provide some color to the veggies. Next time you could also just do a different vegetable, like sauteed carrots or something like that. This way you will not need the oven for both things...just an idea. Hope this helps, good luck!

Such a prompt reply...thanks! I agree, normally I'd have another veggie dish but wanted to use up some good root veggies. Just a few minutes ago I remembered doing veggies in the summer on my gas barbeque...so that would work....despite the cold! Thanks Dawn.
