These were the best grilled prawns we have had in a long while. Even though sage is not one of our favourite herbs, I did try to find it ( especially since Joe said how good they were:). After visiting 3 produce stores that had only brownish leaves we opted for the beautiful fresh basil instead. Perhaps because I used 16 count prawns, or perhaps basil chars more quickly than sage, more than half of it got too charred. But the prawns were excellent ( I did marinade first in the garlic , oil and chili flakes). My husband said to make sure I put lots of stars on this recipe. No problem agreeing to that:)
