I wanted to try making velveted chicken. I prepared all of the ingredients that I wanted to use (chicken, snow peas, Indian eggplant, shiitake mushrooms, and watercress plus finely minced ginger and garlic.). Then I realized I needed a finishing sauce. I didn't want anything that would overpower the snowpeas & watercress. I really appreciated this recipe because it provided instructions for a very simple stock based sauce that supported, rather than defined, the dish. The amount of cornstarch was perfect! If I had tried to improvise my own finishing sauce, I am sure that I would have used too much, and just ended up with a gelatinous mess.
The end result was subtle, and truly let the freshness of the veggie ingredients take center stage.
