Good question, Pete. When you add other components to the dressing (i.e. dairy and acid) to cheese, it changes the nature and composition of the cheese. If you put anything in that solution (herbs, etc.), it would undergo change that likely diminishes the quality over time.
The buttermilk and other dairy have an shorter overall shelf life compared to cheese - so the spoilage comes from the least stable product in the mix.

I made this twice this holiday weekend (July 4th in USA) and its fantastic!
First time: Nice and thick with one tbps of buttermilk, for scooping as a topping onto my home made burgers.
Second time: Thinned out a bit for some salad, with 4 tbps of buttermilk. So nice!
