Yes, I'm a newbie albeit enthusiastic! Shall I assume that a preheated oven finish for fish would, as with meats, also be 200 degrees Fahrenheit? This would be for a thick piece in a stainless steel pan.
Don't worry, I'm not waiting - just planning...

Update on fishy business

Thank you for the tip - it solved the problem I also spoke with some local good chefs who, depending on the oven, will finish at up to 450 degrees F. Finally! I got that lovely crunchy crust that really is satisfying. Yea Rouxbe!!
