I just watched the Clarified Butter Drilldown, and I am intrigued by the statement that the foam is quite delicious and can be used but it usually discarded. I'd love to know what I can use it for!

The foam you skim from the top can be saved and added to many dishes. It can be used in things like soups, polenta, pilaf or even in your morning oatmeal. Sometimes we even use it on our popcorn. Cheers!

That sounds yummy indeed... do I use it instead of butter or as an enricher/extra sumpin'sumpin' like cream or sour cream?

You will not likely end up with a lot of foam so I do not think that it will add a ton of extra "sumpin'sumpin" to dishes but it will add a bit of that extra buttery flavor/richness...and at least it better than discarding it. Cheers!
