commercial convection oven preferences

Hi,

I own a commercial meat processing shop and I am converting it into a commercial kitchen. I am looking for a used commercial convection oven. Does anyone have an opinion on what brands are best? I can go gas or electric. I would like to be able to bake 8 to 10 loaves of bread at a time or 8 pies. Does anyone have experience with commercial convection?

I have used Wolf in the past and been very happy with it. I have also used Jade, which I believe is now owned by Maytag and it was pretty good. I have also heard great things about many of the other brands out there...Thermador, etc.
