RE: Keeping Potato in the Fridge

Not sure if you are talking about freezing or just keeping the potatoes in the refrigerator. Either way, you can always try it and see if you like the results. Cheers!

RE: Keeping Potatos in the Fridge

Hello to all and Coco H. One can keep baked potatos in the frig if wrapped with plastic, then foil for about three days. After that, they begin to turn grey and lose flavor. If you freeze baked potatos, they turn to mush when thawed. Boiled potatos can be kept in the frig for at least one week. But, they must be combined with a fat. Think about potato salad. The mayo keeps them in good condition. You can freeze boiled potatos if you add a fat, like, olive oil, mayo, butter, or butter milk. Mash potatos freeze and thaw wonderfully. I do not recommend you keep frozen potatos for more than two months. I freeze mashed potatos often and they always turn-out wonderful when combined with butter(fat). Best regards from North Carolina. I hope this helps you.

RE: Keeping Potatos in the Fridge

I've only kept smashed potatoes in the refrigerator also, up to two days, I think they loose a bit of flavor though, even if they are covered in plastic or in a plastic container. I usually use smash potatoes to make 'Potato Tacos', using mexican tortilla and adding the smashed potatoes inside, just placing them in a pan until for a few minutes, you can adds salsa if you want!

Enjoy!
