Christmas dinner prime rib. Side suggestions?

I am making prime rib for Christmas dinner for about 8 to 10 people. I have a horseradish mashed potato recipe that I am thinking I may make. But I'm kind of at a loss after that.
I was thinking about the lemon corriander prawn recipe listed here as well. Any other suggestions?

We've also been having sauteed corn, with a little salt/pepper and ancho chile powder, that might go better with prime rib. You can also add some parmesan cheese right before serving.

Great suggestions! I really like the dressing recipe. I may go that route instead of mashed potatoes. I'm looking for something that will stretch the meal as we always seem to wind up with last minute not so expected guests. The kids will bring a unexpected friend along for instance.
The dressing would serve that purpose nicely.

Our suggestion would be to keep the sides more classic. Your horseradish mashed potatoes sound great. We don't, however, suggest introducing Asian flavors (e.g. Coriander Prawns). When we plan a menu, we think about each component/dish getting along with each other - everything should be friends. By this we mean, we wouldn't necessarily mix Italian, Asian or French flavors together in this instance.

If you want to make prawns, you may want to use more classic flavors like a simple garlic/parsley butter. You are going to be cooking an expensive piece of meat, so focus on cooking it well because it's the main event. There is nothing wrong with serving a succulent prime rib with a delicious, well-made jus, mashed potatoes to soak up the juices, buttered peas, sauteed carrots and Yorkshire pudding. In fact, with that menu, feel free to invite us for dinner. :)

If you're looking to stretch the meal, just increase the quantity of the sides. You do not necessarily need to make a bunch of different dishes. You may also want to think about serving a few appetizers/hors d'oeuvres such as the Belgian Endive Salad, Warm Marinated Olives and maybe even a cheese platter (which can alternatively be served for dessert). Lots of ideas - our best advice is to keep it simple and focus on the cooking. Cheers!

Great advice Dawn..

Thank you. I think I will stick with the horseradish sour cream mashed potatos as horseradish is always a good companion to prime rib. I have done probably about 10 prime ribs in the past but this will be my first in the oven. I have always done them outside on my smoker using indirect heat at about 250 degrees. I will keep a close eye on the internal temp and I think it will come out just fine.

Maybe a classic shrimp cocktail as a appetizer along with a cheese/veggie tray. In addition to the mashed potatoes would the roasted glazed carrots recipe listed on this work well?

These would definitely go well with the prime rib as they are basic but delicious! Have a great Christmas dinner!

I'm also planning to cook Prime Rib for Christmas dinner. Thanks to Rouxbe I finally have the confidence to cook Christmas dinner for my family! I was thinking of serving a squash soup as a starter, and blue cheese mashed potatoes and roasted asparagus as my sides with the prime rib. I like the idea of a classic Shrimp cocktail too though so maybe I will rework the menu slightly. Appreciate the great advice from Dawn to keep the sides more classic so they don't overwhelm the prime rib. And Daniel, the stuffing recipe looks delicious so I will definitely plan to give it a try sometime!
