Sweet Potato fries ????

Hi....

I tried many recipes for sweet potato fries but somehow non of them seems to work they all give you soggy fries that doesn't taste good, I've tried crispy sweet potato fries in a restaurant before and they were really delicious and crispy so that's why I know that's it's possible.

I tried blanching them in water or oil first then deep fry them at 375 but still the same result . I tried dredging them in flour , cornstarch , panko ( which doesn't stick by the way) and then deep fry them but still. I also tried making them in the oven and they were actually better but still not crispy at all ????

These can be tricky Khaled as sweet potatoes contain so much sugar. I have also found the best results to be in the oven. Generally I have found that they can't be too small or they have no bite to them, nor can they be too big or else by the time the outside is done the middle is still a bit raw.

I am sure if you have had crispy ones in a restaurant that they were deep fried. At what temperature did you blanch the fries at? Perhaps the heat was too high when you were blanching. It should only be about 325F for blanching. Also did you try cutting them not too big and then just deep frying them (no blanching first)...just an idea?

Hi Dawn ...
I cut my fries the same size the restaurant does ( a bit on the flat side not cubic !! ) and I blanched them in 300F oil the same way I would make a regular french fries ! .
