I was curious about the color distinctions yellow, red and green curry pastes. Also, what is the difference between the Indian and Thai curry flavor profiles.

This is a rather big question for a forum thread as there are many differences between all of the curry pastes available. The main difference between Indian and Thai curries are the different ingredients used which create the varying flavor profiles. Thai curries use aromatics such as lemon grass etc. whereas Indian curries use more Indian spices and aromatics. Look at the ingredients in either a Thai or Indian curry and you will see what I mean. As for the colors of each, again this comes down to the ingredients used and the different flavor profiles. A red curry will often use red chilies, whereas a yellow curry will often use turmeric but again this depends on which type of curry is being made. Also, the different curries all vary in spiciness. Yellow is often less spicy, at least in Thai cooking but again this all can vary.
