  <body>The beauty of this dish is it's so versatile.  Once you know how to combine the cooked pasta to the olive oil in a pan with enough pasta water to create that wonderful emulsion, what goes with it is really up to you.  More often than not, it depends on what is in my fridge or pantry, and sometimes on what I crave.  When I crave anchovies or fresh basil, well guess what, it's going in.  </body>
