Make the Chicken Short Stock Recipe below, but instead of adding chicken stock (as called for in the recipe), just add cold water.
The next time you make short stock, buy a low-sodium, store-bought chicken stock (approximately 2 liters or quarts). Set aside about 1/2 cup for a taste-test comparison. Make another Chicken Short Stock (recipe below), but this time, replace the water with the store-bought stock. This is a great way to improve or even darken the color of a lower-quality or less-flavorful stock. Taste the difference.
