If you really want to learn how to cook, then you need to practice the concepts taught in this lesson. We've compiled some "edible exercises" along with some supporting recipes that will help reinforce what was taught in this lesson.
To practice making a stock-based clear soup, try making the Minestrone Soup (recipe below). For the best, flavor, make sure to use a quality, homemade chicken or vegetable stock. If you do use a store-bought stock, make sure to taste the soup when seasoning as these types of stock tend to contain high amounts of salt.
Try the other soup recipes below. The main thing to realize when making stock-based clear soups is to cook the mirepoix until it softens to extract the most flavor. Build flavor into every step – from the mirepoix to the bouquet garni to the liquid and garniture.
