Make the Velouté Sauce from the supporting recipe below, using white chicken stock. Next, turn this base into a delicious mushroom, shallot, and chive sauce. In a separate pan, sauté about 1 1/2 cups of sliced mushrooms and 2 finely minced shallots. Sauté for about 5 minutes. Next add the velouté sauce and bring to a simmer. Finish with 1 tablespoon of finely chopped chives and season with salt and pepper to taste. Pour over a cooked chicken breast. Note: You can also try enriching the sauce at the very end with a liaison made of 1 large egg yolk combined with 3 tablespoons of heavy cream.
Lastly, make one of soups below. If you want to be a bit more adventurous, make the Chicken Pot Pie or the Seafood with Thai Green Curry. These are just a few great examples of how velouté sauce is used.
