If you really want to learn how to cook, then you need to practice the concepts taught in this lesson. We've compiled some "edible exercises" along with some supporting recipes that will help reinforce what was taught in this lesson.
Take a blind taste test. Purchase three cans of whole tomatoes from the store. One should contain salt, citric acid and other additives; another should contain only tomatoes and tomato juice or puree (no citric acid or salt); and, the third should be San Marzano (you might have to phone a few Italian delis to find them). Do a blind-folded taste test with your friends to see if you can tell the difference.
Make the Basic Tomato Sauce below. Cook some spaghetti and gently toss it with the heated sauce. Finish with a drizzle of extra-virgin olive oil, some torn basil, and a bit of Parmigiano-Reggiano. Enjoy the fruits of your labor.
