How to Make Tomato Sauce

Lesson Goals

One of the five mother sauces, tomato sauce is used in many culinary preparations.

In this lesson we show you how to make a simple, yet classic, tomato sauce that celebrates exceptional ingredients. This base tomato sauce can be customized for many other dishes from pasta to pizza or enjoyed all on its own.

At the end of this cooking school lesson, you will be able to:

  • describe the correct sequence for preparing tomato sauce
  • identify the key critical steps to developing the best flavor in a tomato sauce
  • explain why slicing garlic is preferable to chopping or pressing it
  • explain why tomato paste is used in tomato sauce
  • define passattuto and passatto
  • describe the three methods used to deseed tomatoes
