Just came off of twenty-six years as a vegetarian. Imagine, no meat, no fish, no poultry for the majority of my life, and now I am learning to cook the stuff! Quite a shock, but a great learning experience.
Might go back to veggie if I can figure out how to get enough protein without driving myself crazy. Not sure yet, but enjoying the process for now.
Been doing the Rouxbe free stuff for a year now, so I've gained a lot of technique over the past year. It's amazing how much better I eat and how much more enjoyable it is just from learning better skills and preparation in the kitchen. Wish I'd learned this stuff twenty years ago!
