My Name is Lucia maria Costa
Having grown up around the sparkling blue waters and pure white sands of Goa, a love of fragrant and spicy foods is second nature to me. As a child, I was eager to learn the proper ways to use such spices as cumin, coriander or chillies in our masalas, vindaloos and balchaos
But what fascinated me the most as I grew older was the rich influence of Portugal on Goan cuisine. Goa was a Portuguese colony for over 400 years, and that has left a lasting imprint on the flavour and preparation of food there; recheiado, caldeirada and cabidela reflect the legacy of the state's colonial heritage. I am interested in blending flavours of Goan cuisine with our northwest cuisine and create exotic dishes.
