Step 1: Rinsing the Rice (optional)

Rinsing the Rice (optional)

Rinse the rice under cold water, if desired.

  • 1 cup short-grain brown rice

Step 2: Cooking the Rice

Cooking the Rice

Place the rice, salt and stock into a medium-sized pot. Bring to a boil over medium-high heat, stirring occasionally to prevent sticking.

Once the liquid comes to a boil, cover with a tight-fitting lid and turn the heat down to the lowest setting. Let cook for approximately 45 minutes, or according to the manufacturer's instructions.

  • 2 1/2 to 3 cups stock (or water)
  • 1 tsp kosher salt

Step 3: Resting & Serving the Rice

Resting & Serving the Rice

Once done, remove from the heat and drain the excess stock. Let rest for about 10 minutes. Drizzle with extra-virgin olive oil, season with pepper, and gently fluff with a fork before serving.

  • extra-virgin olive oil (for finishing)
  • freshly ground black pepper (to taste)

Notes

This rice can also be cooked using the oven method or the rice cooker method.

saved the rice

The biggest problem with brown rice here was it was so blaaaaaaaa. Even when cooked with chicken stock. Change to beef stock and following your other suggestion we have saved the rice. Thanks.
