Chocolate Truffle Tart

Since we were talking about chocolate I thought I should post this recipe. A chocolate crust filled with creamy ganach filling .

Step 1: Making the crust

Preheat the oven to 350F .

Mix the chocolate wafers and butter then pat the mixture on the bottom and about 1.5 inch of the side of an 8 inch springform pan.

Bake it in the oven for about 10 minutes or until slightly puffed, then let cool on a rack for about 15 minutes.

  • 1 and a 1/2 C of finly ground Choclate wafers like Nabisco Famous
  • 3/4 C of melted butter

Step 2: Making the filling

Melt the chocolate and butter over a double boiler , then let cool for 5 minutes

Whisk together the cream, sugar, eggs, vanilla and salt then add to the cooled chocolate mixture.

Pour the mixture into the cooled tart shell and rap the pan once on the counter to eliminate any air bubbles.

  • 1/2 lb of good quality 70% chocolate
  • 3/4 stick of butter
  • 2 large eggs lightly beaten
  • 1/3 C of heavy cream
  • 1/4 C of sugar
  • 1/4 tsp of salt
  • 1 tsp of vanilla extract

Step 3: Baking and serving the tart

Bake until filling 1 inch from edge is set and slightly puffed but center trembles slightly when pan is gently shaken, 20 to 25 minutes. (Center will continue to set as it cools.)

Cool tart completely in pan on a rack, about 2 hours. Chill, uncovered, until center is firm, about 4 hours. Remove side of pan and sprinkle with cocoa to serve.

  • 2 Tbsp of dutch proccessed cocoa powder

Butter amounts -- typo or just buttery

The crust calls for 3/4C of butter (1 1/2 sticks), the filling 3/4 stick. Pretty buttery crust "Not that there's anything wrong with that".

Consistent measurements would be helpful -- in grams would be even nicer.

Sorry about that but I thought that every one knew that a stick of butter is 1/2 C !! simple mistake ...

One of us misses the point

The crust calls for 3/4 CUP of butter. One STICK of butter is 1/2 C. Therefore, this measure (3/4 CUP) is equal to 1 1/2 STICKS of butter.

The filling calls for 3/4 STICK of butter. 3/4 STICK of butter is 3/4 of 1/2 C of butter.

So, Khaled -- make this clear for me. There are 454grams of butter in 1lb, or about 115G per stick. How many grams of butter would you like in the crust and the filling?
