Spiced Sweet Potato Fries.

This is the ultimate sweet potato fries recipe extra crispy from the outside and soft in the inside, believe me!! I talk from experience.

Step 1: Prepairing the fries

Prepairing the fries

Wash and peel the potatoes then cut them into 1/4 inch (1/2 cm) sticks.

Soak the potatoes in cold water for at least 5 minutes this is essential because the water will remove the starch on the outside and the potatoes will soak some of the water which will help it to get too crispy without getting greasy.

now drain the water but don't dry the potatoes completely and lay them on a sheet pan.

sprinkle the starch over the potatoes and toss together.

  • 4 medium sweet potatos or 2 large ones
  • 3/4 C of potato starch

Step 2: Frying the potatoes

Frying the potatoes

Heat the oil to 375 F .

Fry the potatoes in batches for 4-5 minutes.

Drain the potatoes on paper towels and sprinkle them with the salt and spice mixture

  • Canola or corn oil
  • 1 Tbsp of salt
  • 1/2 tsp of cumin
  • 1/2 tsp of smoked paprika or chipotle pepper
  • 1/2 Tbsp of brown sugar

** I tried everything to make the perfect sweet potato fries and this is it, I even started a post here: Sweet Potato Fries.

** The perfect thing to dip those fries in is chipotle mayo and it's easy to make.

Why the Potato Starch?

Khaled someone has asked me "what purpose does potato starch serve when making sweet potato fries?"...as this is your recipe, you may want to explain. Thanks!

Extra Crunch !!!?

The problem with sweet potato is that it's really hard to get them crunchy potato flour will give the fries some extra crunch, I personally don't know if you can substitute another kind of starch for potato starch though.

recipe for chipotle mayo?

I have looked everywhere for a chipotle mayo recipe that tastes similar to the dip at Cactus Club. I would love it if you folks would post one!

I am not sure if I have had the chipotle mayo at Cactus Club. I would just try adding chipotle puree (we have a drill-down for that if you need it) to a quality mayo. You could make your own mayo if you like but you don't necessarily have to. Depending on the CC mayo you may want to add a bit of lime juice and/or garlic for more flavor. Cheers!
