Classic Cheese Grilled Oysters

Fresh oysters in the half shell grilled in a creamy cheese sauce. Topped with melted cheese and paprika this is a delicious way to start a fantastic seafood or steak meal. This is probably the easiest and tastiest oyster dish you can make.

Step 1: Prepare the oysters.

Place the rock salt on a suitable sized shallow baking tray.
Place the oysters into the salt in such a way as the salt keeps the oysters upright. The salt can be reused time after time. It makes no difference to the flavour but is used purely to keep the oysters facing upwards.

  • 12 freshly shucked oysters.
  • 2 cups of coarse rock salt.

Step 2: Making the sauce.

Chop the shredded cheese finely.
In a bowl thoroughly mix all the ingredients together.
The cream cheese will be harder to mix as it's often very thick but a whisk will do the job quickly.

  • 100ml thickened cream.
  • 100g shredded tasty cheddar cheese.
  • 1 x teaspoon freshly ground pepper.
  • 100ml vintage or tasty cream cheese

Step 3: Finishing the oysters.

Spoon the sauce mixture over the oysters. About a teaspoon each should be enough but if they are really big use more as you need to completely cover them.
Sprinkle tasty cheese over the top of the oysters.
Sprinkle a little paprika over the top of the oysters. This will blacken with cooking but will impart delicious flavour to them.
Place under a grill on medium for about five minutes or until the cheese melts and darkens to a deep golden colour or slightly more.
Plate the oysters and place a small piece of chili as a garnish on each one.
Serve immediately.

  • 2 x teaspoons ground hot paprika.
  • 50g Tasty shredded cheese.
  • 6 small chilies halved as garnish

Notes

I use Sydney rock oysters but if these are unavailable you can use any freshly shucked oyster with good results. (I have used pacific oysters as well as Bay oysters with equal success)
You can serve these as a fast and easy appetiser. Even people who don't normally eat oysters will like these!
As with all of my recipes this is GLUTEN FREE but I advise you to check the ingredients in the cream cheese as occasionally wheat containg thickeners are used.
