Souffles are hot...really hot

I admit I did not make this souffle but the souffle section of the cooking class doesn't seem to let me ask questions anymore so here goes:

I made a sweet potato souffle the other night using the instructions from Rouxbe and it came out wonderfully. I think... However, it fell within minutes. Now I think that is normal.

But it's really not cool enough to eat even after it has fallen. my guests and I were trying to figure out how are we supposed to eat these piping hot things without burning our mouths. Now I am one to who has no problem eating pizza straight out of the oven, so when I tell you it was hot...I mean it was hot.

I've never ordered a souffle at a restaurant so I can't imagine how they do it. Is this the way they are served? Or is there a sweet spot of when they are cool enough to eat just before they fall and mine was just not cooked right?

Any info would be appreciated.
