<p>Vermouth is often used as a deglazing liquid, since it does not lose its character as quickly as most other white wines. Vermouth is as affordable as an inexpensive table wine, but contains more flavor; therefore, it makes for a good choice as a cooking wine. Make sure to cook with dry &#8211; not sweetened &#8211; vermouth.</p></p>
