"Before this lesson I thought I knew how to roast vegetables, now I know that I was making all kinds of mistakes that I can now correct to take my cooking to new, more delicious level. For example, I was mixing different root veggies together on the same pan, resulting in beets "bleeding" their color onto my carrots and turnips. I also didn't uniformly cut veggies into the same size pieces which often resulted in some over done pieces and some just right pieces. Then there was the improper use of oil, too little or too much. Lastly I was roasting in Pyrex baking dishes and not on metal baking sheets. I think my dinner guests will be pleased with the results of this course! Thanks Rouxbe."
