Dry Vermouth is an aromatized wine. It is made by infusing a blend of herbs, spices, peels and other subtle flavorings with a neutral, dry, white wine. Vermouth is fortified to 18% alcohol by volume, which means it can store without losing its flavor.

Vermouth is often used as a deglazing liquid, since it does not lose its character as quickly as most other white wines. Vermouth is as affordable as an inexpensive table wine, but contains more flavor; therefore, it makes for a good choice as a cooking wine. Make sure to cook with dry – not sweetened – vermouth.
