I have been eating a whole food-plant based diet since June 2013, after viewing the Forks Over Knives documentary. That said, I have a limited repertoire and only modest cooking skills. I cook only for myself as my husband strongly prefers a high-fat diet of red meat, potatoes, dairy (especially butter and cheese), eggs, two types of fruit, raspberries and melon, and no vegetables. We share meals but not menus. I would like to be able to prepare a good variety of simple, tasty, and nutritious meals, and to expand my overall ease and creativity in the kitchen.
