I have been cooking all my life but have always felt that I lacked technical skills. Reading a recipe and executing it properly can only happen with the correct techniques. After doing the Rouxbe trial I could not believe that I was shown how to make water run around a stainless steel pan like a mercury ball and I then went on and was able to brown Chicken Maryland pieces without tearing the skin, in the stainless steel pan. It's taken me 59 years before I learnt that. So thanks Rouxbe - I'm here for the ride!
