Having grown up in the South I have a deep love of belly-filling soul food, but growing up with a family where my mother's end of the family is Hawaiian Portuguese, i also was filled with Chinese, Japanese, Filipino, Hawaiian, and Portuguese cooking, as well as more common Italian and Mexican dishes. It's an eclectic background that gave me a love of the kitchen and cooking and most of all...FOOD...from early on. I don't have many hobbies that I've kept up with over the years, but cooking has always been a wonder. I spend more time in the kitchen than I do nearly anything else.
However, despite my love for it and my skills in it, cooking still holds what are effectively basics that I feel I've missed. I instinctively know how to do many things but I don't know the names of many foundation sauces, which I feel is important, and while I know what spices blend, I don't necessarily have an understanding as to why and how. I'd love to have a traditional foundation to keep all my personal cooking styles and preferences on top of.
I've had a dream lately of opening a low-income diner in expensive Seattle, because there are many poor folks and very few affordable options, honestly. I doubt it will ever happen, but if I get close, I feel getting a foundation, like this site may give, would prove very useful.
