Ratatouille

This was inspired by the movie of the same name. I love Remy and figured if it's true "anyone can cook" then why not me too.

Step 1: Cutting the Veggies

Cutting the Veggies

First thing to do is cut up all your veggies into nice bit size pieces. I did the onion a finer dice and emince the garlic.

  • 2 zucchinis
  • 1 eggplant
  • 1 white onion
  • 4 cloves garlic
  • 1 green pepper

Step 2: Start the the Suate

Start the the Suate

Over medium low, heat a good size heavy bottom pot with a lid. When the pan is hot add the oil and onion and cook till translucent. Now add the garlic but only cook for 30 seconds or it will burn. Now stir in the paste and after a couple minutes add the tomatoes and bring to a simmer.

  • 1 can tomato paste
  • 2 tbls olive oil
  • 1 can diced tomatoes

Step 3: Add the zucchini and pepper

Add the zucchini and pepper

Once the tomato has simmered for about ten to fifteen minutes add in the zucchini, pepper, herbs then tear up the basil and cover for about a half hour. Don't forget to stir it once in a while thou. Taste it and add seasoning to your liking.

  • 1 tbls herbes de provence

Step 4: Add the Eggplant

Add the Eggplant

Add the eggplant and cover and continue to cook for another 1/2 hour. As it breaks down and becomes soft I like to add in more basil here because who doesn't love basil with tomatoes. Turn the heat to low and let simmer a further 1/2 hour or longer. Be sure to check the seasoning before you serve it.

Notes

Ok my dad did help me with this as he did all the website stuff but he can read.
I did wash and cut up the veggies and added everything to the pot and did all the stirring and helped with the tasting. This would be good with any pasta but we had it on plain rice and it was "yumeriffic". I don't know if this is as good as what Remy made in the movie but it's the best I can do and really it does prove anyone can cook.

Garlic

Maybe I'm the only one who would forget without instruction, but the directions don't tell you when to add in the garlic. I assume you cook them with the onions, naturally.

Don't burn the garlic

Opps my Dad forgot to add it to the recipe. I know that you only cook garlic a short while or it burns quick so just add it 30 seconds before adding the tomato paste. I had my dad change the recipe. Thanks for catching that Jennifer.

Hesham I'm now six and dad lets me use a very sharp knife, with supervision of course. I love tasting while I cook.

Hi Kate, I do not have a rat under my hat that pulls my hair to tell me how to cook so I need a recipe, so thank you for posting this (or thanks to your dad :D). I was looking for a recipe on Ratatouille because my boyfriend is French, and we live in Quebec, so it was fun to make a dish from his mother country, France. I like to learn about food from other countries. I baked the eggplant because I thought that way it would keep its colour, but instead it got mushy and it made everything look like a Ratatouille pudding. This is OK because the big tall scary food critic is not going to come to our house to taste it. I will just try again next time!! Thank you again, and I think it's great you love cooking.
