Arroz Chaufa (Fried Rice Peruvian Style)

Arroz chaufa is a great way to use leftover rice, and it's a one dish meal - what could be better? Add leftover veggie chicken, roasted veggie hot dogs soy meat (protein soy) or just vegetables - it's a very flexible dish. It comes together in just minutes, once the simple prep work of chopping the vegetables and assembling the ingredients is done.

Step 1: Stir fried

Preparation:

1.- Dehydrate the soy meat (Protein Soy) with hot water about 10 min ,then wash and squeeze it.

2.- Fry ginger and crushed garlic in a wok, after that add the soy meat and the tofu fry between 5 to 7 min.

3.- Add soy sauce, scallions and red pepper (saute for a 1 min).

4.- Add cold rice, stir and add more soy sauce and finally add a few drops of sesame oil. Salt to taste.

  • 4 tablespoons vegetable oil
  • 1 tablespoon sesame oil
  • 1 tofu
  • 1 bunch of scallions
  • 1 tablespoon chopped ginger
  • 1 tablespoon chopped garlic
  • 1 red pepper, diced
  • 1 red pepper, diced
  • 1 cup of Soy meat (protein soy) or you can use hot veggie dogs, sliced
  • 4 cups cooked rice
  • 3 tablespoons soy sauce
