Step 1: fire roast on your BBQ

Fire roast first three ingredients till softened.
Finely chop onion & tomatoes and put in a large bowl.
Finely dice mini sweet peppers or tam tams put in bowl.
Put the rest in the bowl and stir around 30 times
Put in fridge for at least 2 hours before serving
to spice it up roast a jalapino or two dice them up and mix in.

  • 1 large onion
  • 8 roma tomatoes
  • 8-10 mini sweet peppers
  • 1 TBLS. Minced garlic
  • 1/2-3/4 bunch chopped cilantro
  • Zest from 1 lime
  • Juice from 2 limes
  • 1 small can of tomato paste
  • Dash of powdered rosemary
  • Salt and pepper to taste
