When making stock, keep in mind that the mirepoix you choose will also affect the color of the final stock. To keep the stock as light as possible in color, avoid vegetables that bleed color, such as carrots. For light colored stocks use ‘white’ mirepoix. White mirepoix consists of only white vegetables such as onions, the white part of leeks, and celery.
