Expensive brands of chocolate will use pure vanilla beans and/or pure vanilla extract.
To decrease production costs, manufacturers add artificial vanilla flavorings to chocolate. Quite often, vanillin is added, which is made from various industrial by-products, and doesn’t contain the same full flavor as whole vanilla beans or their extracts.
