Most people think cocoa beans are roasted in the same manner as coffee beans; however, due to their delicate nature, cocoa beans are roasted at much lower temperatures.

Since different beans require different roasting times, the process must be monitored closely to avoid over-roasting. Over-roasted beans will result in off flavors which cannot be corrected.
