What is a Simple Baker's Bread Formula?

Text

*A Simple Baker’s Bread Formula is easy to follow.* For one loaf of basic lean dough bread, irrespective of its shape, you can use the following ratio of ingredients:

*1 cup water*
*1 teaspoon of dry yeast*
*1 teaspoon of salt*
*2 cups of unbleached bread flour (more or less)**

*Because the humidity in flour changes from day to day and especially season to season, you may require more or less flour to create a dough with the proper consistency.

*The Baker's Formula (for basic breads) can also be weighed*:

|<. Flour |>. 100% |>. 500 g |>. 2 kg |
|<. Water |>. 60% |>. 300 g |>. 1.2 kg |
|<. Yeast (Fresh) |>.    3-4% |>.    15-20 g |>.    60-80 g |
|<. Salt |>. 2% |>. 10 g |>. 40 g |
