A Simple Baker’s Bread Formula is easy to follow. For one loaf of basic lean dough bread, irrespective of its shape, you can use the following ratio of ingredients:
1 cup water
1 teaspoon of dry yeast
1 teaspoon of salt
2 cups of unbleached bread flour (more or less)*
*Because the humidity in flour changes from day to day and especially season to season, you may require more or less flour to create a dough with the proper consistency.
The Baker’s Formula (for basic breads) can also be weighed:
