Tips & Techniques > What is a Simple Baker's Bread Formula?

A Simple Baker’s Bread Formula is easy to follow. For one loaf of basic lean dough bread, irrespective of its shape, you can use the following ratio of ingredients:

1 cup water
1 teaspoon of dry yeast
1 teaspoon of salt
2 cups of unbleached bread flour (more or less)*

*Because the humidity in flour changes from day to day and especially season to season, you may require more or less flour to create a dough with the proper consistency.

The Baker’s Formula (for basic breads) can also be weighed:

Flour 100% 500 g 2 kg
Water 60% 300 g 1.2 kg
Yeast (Fresh)    3-4%    15-20 g    60-80 g
Salt 2% 10 g 40 g
