Tips & Techniques > What is Broiling?

Broiling is a dry-heat cooking method. Food is cooked directly under a heat source (the top element of either a gas or electric oven). The temperature used is typically very high; however, how close the food is placed in relation to the element will determine how quickly the food will cook and brown.

Thin cuts of meat, poultry, fish and vegetables can all be broiled. Breads can also be toasted.
