When frying, recovery time refers to the amount of time it takes for the oil to return to the proper cooking temperature once the food has been added. The faster the recovery time, the better the end result will be. To ensure a speedy recovery time, make sure not to overcrowd the frying vessel. Overcrowding will cause the temperature of the oil to drop dramatically and it will take longer to cook the food properly. This will result in greasy and unappealing fried food.
