Whether shallow frying or deep frying, the sizzling oil will always create greasy vapors. A frying-screen may help reduce splattering while allowing the steam from the food that is cooking to escape.
NEVER use a tight-fitting lid when frying. Water and oil don’t mix. A lid will only create dangerous condensation within the vessel. This is why commercial deep fryers never have lids. Even though electric deep fryers do come with a lid, the machine contains special vents to allow the steam to escape.
