Can you cook tomatoes on a carbon steel pan? And how do you deglaze it? Can you use alcohol like beer and wine?

So let me run through your questions one by one and I'll provide a quick response to you. um First of all, yes, you can use a card and steel pan, you know for tomatoes, you know, in fact in the context of Mexican cooking, you know, we see Tomatoes cooked to some extent or another, you know often on a steel Comal which is a carbon steel pan. How do you deglaze it? But yeah, just like you would any other pan, you know, and the liquid can be anything you want. You mentioned a couple of examples beer in wine. Certainly. It could be that as well as water or fruit juice. For example, you know, you get to pick the liquid based upon how you like the end results. You knowing that it's gonna be a reduced whatever is in there whether sweetness or bitterness or other aspects of the flavor will be concentrated and will shift very often and so just give it a test and see how you like the end results. um Let's see. Yeah, you know in terms of cooking on the grill carbon carbon steel. Yeah carbon steel works great you bet, but you can certainly use other pans. If you don't mind them getting you know, black stains, you know, which is kind of a a badge of honor in a way, right? It shows that you've been doing some cooking. So yeah choose, you know, whatever cookware that you want to use and give that a try too. I think all this stuff is worth practice.
