Question:

When I soaked my cashews about 5 hours and then put them in a vitamix, they still seemed bumpy and not smooth. How do I get a rich and creamy texture out of it?

Answer:

So my first recommendation is how old were the cashews. Did you check their expiration date either on the bin that you bought bought them at if they were bulk or if they came from a jar. and then after you finish soaking the beans the cashews rather I give them a really good rinse and that seems to help them get that little filmy stuff off on those little dots and I don't know what kind of if you have the big canister the the 64 answer but I also use a six 32 ounce grinding Vitamix container because the blades go the other way and it seems to grind better and my cashew creme or anything that I use to do make a bechamel or whatever. It comes out really smooth, but I think it's in the rinsing and make sure that the nuts are fresh. So I hope that's helpful to you.
