Question:
For firm tofu - was it crumbly when I baked it because I didn’t get all the water out? Are there tips for working with this substance?

Answer:
I don't know how long that you drained the tofu. What I do with it is I wrap it in a towel. And then I put it in a colander and then I put a bowl underneath. And then I put it in my fridge with a bunch of heavy containers on it so that it can take out about two to three ounces of water so that when you are ready to use it, maybe five hours later, but it works best overnight for my experience. It is really nice and dry and when I put it into the air fryer or I roast it in the oven whether it's in slabs or in tubes it comes out perfectly. It doesn't Had that crumbly texture which is one of the reasons why I never ate tofu until I did come to Rouxbe and made the roasted tofu recipe which is one of my favorite recipes since forever. So I would drain it a little bit better and I think you're going to meet success that way. The other thing is I have an aerated roasting pan so that when I put it in the oven it sort of I don't have a conventional stove, but it's sort of aerates well, and I do find that it works best in the air fryer. So I think it's in the dream. I think that's the most important thing.
