Well they don't have much flavor. So because all the flavor has been cooked out to give your beautifully colored stock that wonderful flavor. But what you can do with them is you could strain them and squeeze out even more excess stuff and then you can use them to make vegetable crackers and there are recipes for crackers everywhere and you don't necessarily you don't even need to dehydrator, but that's what I would use them for. Sometimes I'll give them to my dog who absolutely loves them. But in terms of reusing them and serving them as a dish their flavor has gone to the stock. I hope that was helpful.
