Question:

Which buttercream is the best for hot weather like Florida?

— Altagracia Saldana

Answer:

So yeah, that can be a problem if you're doing cakes or if you're doing cupcakes and you're in hot weather. I used to live in Austin for 18 years. And if you had a cake outside and you had it frosted, especially like on the sides, you're kind of gonna see it melts, which is a bummer when you're you know, having a birthday party special for a kid or something. If it's outside, you could be out for a number of hours. Typically, you might have 90 minutes until you start to getting some melting happening especially in high humid areas. So there are a couple solutions to this. I've seen over the years. I'm gonna post one here from sugar and Sparrow. That's actually a really good. She does. She basically kind of broke it down scientifically to be able to look at it and see what would work best, but the short answer is using a different kind of a shortening which is you know, you don't have to do like a Crisco or something like that. You can actually you know use a issue shortening And you know still do a zero fat as well, but the other trick is actually to use a meringue powder and a meringue powder. You can do it vegan and you can do it, you know just with eggs as well. But typically you're going to be adding something like a cornstarch or a cream of tartar to the Frosting mix and it's about a tablespoon of each. Do you be able to mix into your frosting to be able to help it to stand up a little bit more? She goes into a lot more detail on this on the different kinds of frosting. So the different kinds of cakes you're going to be making so I'm going to refer to that link on there that we just posted here. It's a really good way to be able to you know, kind of break it down for your specific needs just because there are a lot of different kinds of buttercreams out there. So if you're doing a vegan butter cream or if you're doing a traditional butter cream, this will give you actually a couple answers to help out with that. So I hope that helps.
