Question:

How can I make pasta using brown rice flour and quinoa flour without eggs or oils with a mind for forks over knives?

— Kathryn Clatworthy

Answer:

So that's again pretty specific rice flour or quinoa flour. If you're just doing without eggs, you can typically just do a water mixture into those. So, you know, if you're using just rice flour quinoa flour, you might want a little bit of xantham gum in there as well too. I don't have specific recipe at the top of my head for those but it's usually just a water to flower ratio and you might want to do a little xantham in there to get just a little bit of that stretch into the pasta as well. Just the same way you make your well basically, you know as a regular pasta but instead of doing eggs, and you can actually work for water into it and fold up your water and see the well and then you when you're done you want to be able to form a ball without any of that flower sticking to your hands typically cover that With like a Saran or something like that, you can even do a towel over a bowl on it. At least for an hour. Bring it back out knead it out. And then you can use your pasta maker or you might even try it on, you know, the the rolled out method where you can slice it might be a better, you know for the gluten-free because it didn't stick together as much as it would with those two. I've also seen people use aquafabo for those kinds of things too after it's been, you know, kind of whipped a little bit to be able to get a little body into those add a little bit of protein too. But for specific recipes, you'll never want to do a little bit of a deeper Research into those but that's the basic method for you.
