What is the healthiest non stick skillet surface?

Answer:
I like ceramic. and I have never found ceramic to peel or crack. I think the other part of using perhaps ceramic is how you clean them and what gentle surfaces and soaps and such that you use and nothing to abrasive. I'll be very honest with you. I have grown up loving brillo and Now use other things that are a little bit gentler but Brillo was a rich part of my culinary history as the granddaughter of Two Chefs. So ceramic is my final answer.
