Question:

What makes all oil unhealthy, like olive and coconut? Is it unhealthy to include sesame oil as a flavor component of a dish?

— Aeryn Crichton

Answer:

You know, I am gonna defer to some of the, the docs out there, the doctors that is physicians and researchers that have, um, you know, drilled down to do, um, some more specific research in this area of, uh, and, and, and also why their particular, um, proponents of no oil or, you know, whatever the, the rationale might mean, might be. Um, but, um, uh, you know, the, the generally speaking right, the, the more refined in oil is, um, you know, the more natural stuff or the good stuff that was in suspension in that oil is removed. And, uh, you know, while there might be some negative effects of, of oil or certainly excessive oil, right? In our diet, um, some of these constituents that are naturally present in, in unfiltered oil, let's say, um, they do have some, some health benefits. And, um, so it's just a matter of, of understanding, uh, what the research, what the literature tells us, and then, uh, maybe weighing those pluses and minuses within your own context. And, um, you know, you might even have a, a conversation with your healthcare provider, uh, maybe with a dietician, uh, to get some different perspectives, uh, on the use of oil, the quantity of oil, and the types of oil, okay, in your diet. Um, you know, olive oil, for example, um, you know, in its, um, um, unfiltered or, uh, less filtered state is, uh, used quite a bit in, you know, what we call the, the Mediterranean diets, or certainly the, the Mediterranean region of the world. And, um, you know, there are some protective benefits to that. But again, depending on your underlying state of health, uh, it may be advantageous for you to minimize or even avoid added fat in the form of these cooking oils. So there's a lot to be considered on an individual basis, and I always recommend that you talk to, uh, a healthcare provider, uh, that knows you okay about these topics. Um, and then, uh, regarding sesame oil, uh, there's nothing necessarily wrong with using sesame oil as a flavor component, okay. In a dish. And, uh, when I think about sesame oil used as a flavoring component, uh, it's typically toasted, uh, sesame oil that's added as a finishing agent. Uh, and generally this is associated with, uh, with East Asian, broadly speaking, east Asian cookery. Um, it's a flavor aesthetic that's enjoyed by many people, but, um, very commonly used as well.
